Preparation

  1. Peel and finely chop the onion.
  2. Mince the garlic cloves.
  3. Slice the celery sticks and roughly chop the carrots.
  4. Peel and chop the potatoes into bite-size chunks.

Cooking

  1. Place the chicken thighs, drumsticks, onion, garlic, celery, carrots, potatoes, bay leaf, salt, pepper, and chicken stock into the slow cooker.
  2. Cover with the lid and cook on low for 6 hours or on high for 4 hours.
  3. Once cooked, remove the chicken pieces and bay leaf.
  4. Discard the bay leaf and shred the chicken meat using two forks, discarding the skin.

Plating & Serving

  1. Return the shredded chicken to the slow cooker and stir to combine.
  2. Serve the soup in bowls, garnished with fresh parsley or thyme, alongside crusty bread.

Notes

This soup can be made ahead and stored in the refrigerator. Reheat in a pan until piping hot before serving.
